Probably Madhaven for me. It's got some neat terrain, and the White Knights story is nice, but otherwise the mutants were lackluster and I ended up rolling my eyes far more often than I did for any other WB.

I came across the GURPS Cyberpunk book at our local used book store before it shut down. If nothing else it provides a lot of very interesting ideas and plotlines which are outside the Rifts universe, so they're a kind of fresh take!

It's a tie between the VSAM and the Wild Weasel for me. If you really want my dream SAM, it's a VSAM with the turbo thrust system exchanged for an anti-gravity system. Instead of wrist rockets I'd prefer Arkhon tri-beams. I'd add a back up TW energy supply and use that to power a TW ECM package.
