You mean like Dwarves, Gnomes, In'Valians, and the like?
Yeah. I agree. In the Phase World setting almost every race is seven feet tall and has either an impossibly thin build and/or superhuman attributes.
It stems from the fact that gamers (both the players and the writers) aren't always happy with the way they look in real life, and so when they escape intot he fantasy of the game, they want to play (or write about) tall, pysically fit, agile, handsome characters.
Until our society gets over its height stigma, it isn't likely to change either.

I always assumed it was because the aliens were from a low gravity world so they evolved skeletons that dispersed weight over a greater height...
That and none of the artists/creators wanted to reinvent the ewok.
