Another one for the list, and a lot more light hearted.

I recently watched a really wacky one...SHE starring Sandahl Bergman, Conan's thiefly girlfriend from Conan the Barbarian. In SHE she stars as a she goddess and ends up having all sorts of wacky adventures, like fighting monsters who for no reason jump out of cardboard boxes randomly, a hairy dude in a pink tutus, a psychic megalomanic, nazi bikers who worship something called NORK etc.

It was one of those so bad it's good kinda flicks...it would be really fun watching with friends. It's illogical, full of bad puns and cheesy special effects. Also for an added bonus. a really bad 80's rock soundtrack.

A Boy and His Dog and 12 Monkeysnare soooo good! Highly recommend.

Not really post apocalyptic, more Chaos Earth stuff, but "The Second Renaissance" from the Animatrix is a neat look at the SHTF.

And just for fun the shortest horror story ever written:

"The last man on Earth sat alone in a room. There was a knock on the door."
