Let see... I will answer what the three top Job classes.
This will mean excluding psi classes and empowered classes because they are not jobs, and classes that are not of Rifts earth because this is the rifts forum.
Of course Races and their associated RCC's are excluded, for obvious reasons, too.

Wilderness Scout
Saloon Girl
Demon Queller

I don't care about canon answers. I'm interested in good, well-reasoned answers and, perhaps, a short discussion of how that answer is supported or contradicted by canon.

If I don't provide a book and page number, then don't assume that I'm describing canon. I'll tell you if I'm describing canon.

Cyberknight
Paratrooper. ( Badly 'named' OOC that represents the Navy Seals type training, in Rifts Earth)

I like multi-talented characters.
1. Scathach (England). Craftsman, herbal magician, and fighter, this class can serve well in many roles for most groups (except CS, of course).
2. Cyber-Knight. The class that's so cool it got its own sourcebook. A terrific fighter with a rich backstory. The Fallen Knight from Phase World takes a close second in this category, as it's less known and less developed, though it's generally more-versatile.
3. Techno-Wixard. Versatility and capability are the hallmarks of this cross-disciplinary class.

Military Specialist - good for most everything, first class I ever played in RIFTS and still my go to selection...
Juicer - the best killing machine a human can be, still a top tier and playable PC
Wilderness Scout - a good choice for any size group and is very self reliant. With the right skill selection can be capable of upper mid-level heroics in any environment

-STS
My skin is not a sin - Carlos Wallace
A man's rights rest in three boxes. The ballot box, jury box and the cartridge box - Frederick Douglass
I am a firm believer that men with guns can solve any problem - Inscriptus
Any system in which the most populated areas have the most political power, creates an incentive for areas that want power to increase their population - Killer Cyborg

Japanese Police officer with a light bionic conversion, great skills, awesome martial arts and Bionic weapons.
Flying Tiger, In my opinion one of the best mutant animal classes in the South America book.

Leaving out non-humans

1. Mind Melter (ignoring distinction between OCC and PCC) - best class for being a bum and enjoying yourself.
2. Shifter with major psionics - very flexible, would avoid alien intelligences and powerful supernatural beings like the plague personally.
3. Cosmo Knight (despite the constant hard work required) or maybe a tattooed man.

Failing those, if part of a built-up high tech society with huge technical resources, a 90% conversion light machine/cyborg.
And if... somone whipped out a mini gun. We run and hide. lol.

Now.. some guys won't... and you can say nice things at their funeral. "He was a brave soul.... if stupid.. he didn't take cover when the guy whipped out the mini gun on us that day.. but his blood-fountaining corpse did give us a chance to sneak around and clonk the machine gunner on the head with a rock. Rest in Pieces.... Swiss Cheese Man.....

Double edged sword, psi-hounds/dog boys are both. A human can not train to be a dog-boy, but not all psi-hounds become or stay coalition dog-boys.

Well "Dog boy" is a possible OOC for CS mutant psi hounds. They can also take other OOCs like the feral ones or even Cyber knights. :)

It is an OOC with heavy species restriction but an OOC none the less.

To me a Dog Boy (they job not creature) is an RCC. Like a Gosai assassin, only the Gosai can be one but they can be other things. So I call the Dog Boy an RCC for the Race PSI-Hound.

If it smells like a RCC, quacks like an RCC, looks like a RCC then it is an RCC. Even if is is wearing an OCC name tag.

Depends. I have a bunch that I've worked on that I really like:

1) Order of the White Rose Mystic Knight/Reconciler (Official Class from Rifter 36)
2) NGR Intelligence Commando (Rifter 55)
3) Luftwaffe Pilot

Of things that I didn't write:
1) Undead Slayer
2) Psi-Slinger
3) Cyber-Knight
