Well, the enchantment is pretty straightforward. It's invisible to all but the wielder, which makes it easy to conceal and easier to use in combat. But what happens when two people are wrestling for control of the item? Do they both see it? If the person who has the weapon sets it down, they are no longer weilding it so can they see it?

As a GM I would put it that only the owner of the weapon (ignoring any see the invisible power, ability or spell) sees the weapon. Why...because I am pretty sure this is the intended meaning of the text.

If reading the text without applying any 'understanding' to the words in the raw...
--if the invisible weapon (made via the PF2 magic weapons options) is struggled over between two or more people, none of them see it.
-- If the person holding the weapon and not fighting with it (In Other Words not wielding it in the narrowest meaning of the word 'wield') the the holder doesn't see it.

I think it is problematic to start trying to define what an "owner" is, and is unnecessary in this case - it says wielder, not owner. Even defining what "wielding" counts as I think is unnecessarily complicated. I say anyone touching the object can see it. My opinion.

Well, that makes more sense to me as well. But what happens when you put the weapon down? How do you find it? I guess drape something over it?

Yeah, you put it down without somehow marking where it is, you might well lose it! Be careful! Or you could just leave it in a (visible) scabbard.
More importantly, what does the window of an invisible-sword shop look like?

Personally, I have always run them as having a grip or hilt that is visible to all, rather than everything being invisible. Enemies not being able to see the length of the blade of a sword or haft of a hammer or axe would seem to me to be just as worthy of the bonuses the enchantment gives.
