One of my player wanted to play the undead hunter and here is what I decided needed to be done to bring it up to 2nd edition standards..
1) They do retain the spell knowledge and will never share it with anyone unless it's another undead hunter. Spell strength is frozen at 12. Any new spells learned must specifically pertain to the mission of slaying the undead. (IE no love charm, faerie dance, fools gold, etc.)
2) Most of the weapons remain unchanged. They begin with Final Rest or the Vampire slayer. I also let them keep the Holy Stars with the exception that they can only be activated three times each. Then they will have to be taken to an alchemist (Most likely one that is also in the undead hunters association) and have them recharged. The other items remain unchanged.
On a side note.. The player also should have a goal in life to travel and wipe out the undead whenever/wherever it's encountered. They shouldn't care too much about local politics nor staying too long. These are characters who are actively seeking out the undead where they find them. That they carry such nice mystical items makes them a big target for thieves.
