How To Build a Magic Guild

Anyone know if there exists any official guidance on how to stat out a magic guild (kind of how Mercenaries has a point system for building a merc company)? How do you handle this in your games?

I want to say the Adventure Guide has a generic organization building guide.....

Yes, page 123 of the Adventure Guide is where it starts.
That's actually where Secret Organizations and Syndicates starts, page 111 (IIRC) is where information on founding Cities and Towns are, Merc companies and Travelling shows construction rules re-appear here, and page 155 talks about player controlled/run groups in general.
