My understanding is the 500 S&W is comperable to a shotgun, so around 5D6.
I'm not familiar enough with the other cartridges, but I suggest you compare to some existing rounds.

I suggest you do that : what are the ammo characteristics (starting with the basics: caliber vs length) ? compare with similar rounds.
The Compendium of Contemporary Weapons mentions wadcutter and semi wadcutter rounds, check there if that modifies the game stats.
But honestly, I think that you are asking in too much detail, the system just isn't that precise.

I thought about it for a while. Since a 44 mag is 5d6 in the weapons book:
* 50 S&W 300 grain = 6d6, + 1 versus armor
* 45-70 405 grain semi wadcutter point = 7d6, half damage transfered through soft armor (only under 100 yards). Not a lot of recoil so can fire/reload once per action.
* 450 Marlin 350 grain hollow point = 8d6+8 or 1d4x10+8 (this rifle can kill an elephant within 100 yards, preferably 50 yards, so...). Massive recoil so takes 1 action to fire and 1 action to recover/reload.
* 300 ultra-mag 200 grain boat tail = 8d6 or 1d4x10 sdc, +4 versus armor. -2d6 at 600 yards, -4d6 at 800 yards, -6d6 at 1000 yards (I've targetted mine in at 600 and have shot at 800)
Recovery? Only for the rich and 20 counties.
